Planting, BBQing, and a Recipe

by Meg on May 22, 2012

Good morning love! :)

I hope you had a good sleep. I must have been behind on my sleep because I slept in until 7:00 am this morning! I usually wake up without having to set an alarm at 6:00 every morning, so I was a bit shocked when I saw that it was 7:00 when I opened my eyes!

Luckily, my oats were waiting in the fridge for me. All I had to do was warm them up and cook my eggs!

breakfast of champions!

Lately, I have been cooking my steel cut oats in the evenings so they are all ready for me in the morning! I prefer steel cut oats over rolled,  but I am much too impatient in the mornings to cook my oats for 25 minutes.

After breakfast, I went to the gym and completed my triceps and biceps workout. Both muscle groups were absolutely fatigued by the end of my workout. I have a rest day tomorrow and am looking forward to it very much indeed! :)

Yesterday, my Mom and I had a very productive day. We got all of my herbs and vegetables planted into pots! I am so excited for them to grow, grow, grow! I have a ton of recipes to share with you using these fresh herbs, so hopefully they grow fast!

Five different types of basil: sweet, Greek, purple, thai, and cinnamon

Oregano, curry, chocolate mint, lavender, and pineapple sage

Rosemary, thyme, parsley, and sage

Mint mojito, lemon verbena (my absolute favourite!), and kale

Cherry tomato plant

I look forward to my herbs every year!

I also look forward to BBQing and I did quite a bit ever since I moved home. On the weekend I grilled pork tenderloin that I had marinading all day and made a life changing salad with it!

Meg’s Favourite Pork Marinade

1/4 cup soy sauce
3 tsp minced ginger
2 garlic cloves, minced
1 TBSP Sambal Oelek chili garlic sauce
2 TBSP lime juice
2 tsp all spice

I marinaded the pork tenderloin all day and then grilled them on medium heat until the internal temperature reached 160 degrees F.

For dinner I created a salad that I have to share with you. It was absolutely delicious and I savoured each bite while oohing and awing over the miraculous flavour combinations.

Grilled Pork and Asparagus Salad

Makes one serving

1 – 2 cups baby spinach leaves
10 asparagus spears, grilled
red onion, thinly sliced
1/2 avocado, sliced
4 oz. pork tenderloin, thinly sliced
1/2 TBSP whole grain mustard thinned with water

Toss all of the ingredients together and you’ve got yourself a salad full of fresh spring flavours!

Enjoy! :)

Do you plant a herb garden?

What vegetables to you plant in your garden? Our backyard is inhospitable for a garden due to all of the tree roots, but I’m happy I can still have fresh cherry tomatoes and kale from my potted plants :)

Steel cut or rolled oats? I ate rolled oats last year, but then I tried steel cut oats and my life was instantly changed! Steel cut oats are so darn good! I look forward to them every morning :)

Have a great Tuesday friends! See you tomorrow!

Meg
xoxo

I’m pretty sure I have the exact same breakfast just about everyday! (including this morning lol!). I planted an herb garden – I did basil, chocolate basil, stevia, dill, cilantro and mint! I live in an apartment so I can only do pots (as opposed to a real garden in the ground – so no veggies this year). My other pots have lots of flowers and pretty non edible plants! :)

Oh, and steel cut all the way. I eat rolled oats more often because of the conveinence but I’m gonna use your idea and make it the night before!!

Meg May 23, 2012 at 12:25 AM

Sounds like we both have great herbs growing :D I love eating the Stevia leaves ;)

I’ve been wanting to plant herbs for ever! But we have lived in apartments where it hasn’t been the best idea. Now we have a balcony so I might just have to finally do it!

That salad looks like it could rule my life as it contains pork tenderloin and avocados..two things I can’t live without. Will make it soon since that recipe looks o so scrumptious!

I think my puppies would destroy my garden if I did one- I would have to build a fence, but I don’t think I want to do that.

If I had a garden, I would like to have cucumbers, sweet potatoes, peppers, broccoli, and garlic.

Meg May 23, 2012 at 12:28 AM

Garden cucumbers are amazing :D

The marinade and salad looks so good! I would love to grow my own herbs, I want to steal all of yours ;) I think I’d kill them within a day, I suck at gardening. I love oat bran the most, then rolled oats I think. I’ve actually only had steel cut once, takes forever to cook!

Reply

Meg May 23, 2012 at 12:29 AM

That’s why I cook them the night before ;)

I really need to try YOUR recipe for oat bran as I love oat bran so so much!

Very jealous of your herb garden! I think I might go to Bunnings this weekend and see what I could get for my little garden. It seems so expensive to buy fresh herbs.

Ohhh I love Sambal so much. Bookmarked this post :-)

I do like steel cut oats better but I always have rolled in the house so I tend to use those. I make them the night before too though – I put extra liquid in, cook them up and then let them sit overnight in the fridge and they double in size, so that’s my main motivation behind it ;) .

Love your herb garden! I’ve had a herb garden my whole life but I don’t right now :( . It is one of my favourite memories though, going to the garden centre with my dad and picking out the herbs that we planted later that day together. I think I was 10 when I first started it!

Reply

Meg May 23, 2012 at 12:31 AM

I should try your method for rolled oats! Sounds great! Double in size!? Nothing wrong with that ;)

Sarah @ the Brain and Body May 22, 2012 at 6:47 PM

Yay for sleeping in! That rarely happens to me ether, so I can relate! The herbs you chose are awesome! My mom and I plant cucumber and cherry tomatoes every year and they are always great, the cherry tomatoes usually produce a lot of fruit! This year we even planted a spaghetti squash! Can’t wait to see how it grows :)

Meg May 23, 2012 at 12:31 AM

I am so excited for you! I haven’t ever planted spaghetti squash before! :)

I’ve recently planted herbs (from seedlings) – although only chives and basil (but my basil isn’t doing too well!) :( I’m on the 11th floor of an apartment building – I don’t know whether its too hot for them/too windy or what!? :( And as for my poor parsely seeds – I got one to sprout up, then the wind blew the poor sprout over and broke it! :(

its so expensive to buy herbs from the supermarket, I really need to get more to grow!

Oh and from experience, just a tip, I would suggest transplanting your mint to its own pot and it tends to overgrow/outrun other herbs if planted in the same pot as others…. :/

Reply

Meg May 23, 2012 at 12:33 AM

The mojito mint is planted alone, but thanks for the tip :) As for the chocolate mint, I have planted it with others before and it’s done very well :)

Oh, I’m SO excited about your herb garden!! Five different kinds of basil?! I never knew there were so many varieties! Looking forward to those yummy recipes, hun. And goodness, your pork salad looks and sounds delicious! I haven’t cooked with pork in AGES, but now I’m craving it!

We have a few planter boxes on our deck, but other than that, we still have a ways to go on our garden. I know one of my housemates is planning on buying some mulch this weekend. I want to plant flowers too!

As you know, I’m still pretty knew to the oats for breakfast thing. ;) Once I’m finished with my rolled oats, I’m definitely going to take your advice and try steel cut!

Love you, sis. Loved your email this afternoon too! I have busy day tomorrow, so if I don’t write back, I promise I’ll do it Thursday!! Love you!! xoxo
