Good morning love!
I hope you had a good sleep. I must have been behind on my sleep because I slept in until 7:00 am this morning! I usually wake up without having to set an alarm at 6:00 every morning, so I was a bit shocked when I saw that it was 7:00 when I opened my eyes!
Luckily, my oats were waiting in the fridge for me. All I had to do was warm them up and cook my eggs!
Lately, I have been cooking my steel cut oats in the evenings so they are all ready for me in the morning! I prefer steel cut oats over rolled, but I am much too impatient in the mornings to cook my oats for 25 minutes.
After breakfast, I went to the gym and completed my triceps and biceps workout. Both muscle groups were absolutely fatigued by the end of my workout. I have a rest day tomorrow and am looking forward to it very much indeed!
Yesterday, my Mom and I had a very productive day. We got all of my herbs and vegetables planted into pots! I am so excited for them to grow, grow, grow! I have a ton of recipes to share with you using these fresh herbs, so hopefully they grow fast!
Five different types of basil: sweet, Greek, purple, thai, and cinnamon
Oregano, curry, chocolate mint, lavender, and pineapple sage
Rosemary, thyme, parsley, and sage
Mint mojito, lemon verbena (my absolute favourite!), and kale
Cherry tomato plant
I look forward to my herbs every year!
I also look forward to BBQing and I did quite a bit ever since I moved home. On the weekend I grilled pork tenderloin that I had marinading all day and made a life changing salad with it!
Meg’s Favourite Pork Marinade
1/4 cup soy sauce
3 tsp minced ginger
2 garlic cloves, minced
1 TBSP Sambal Oelek chili garlic sauce
2 TBSP lime juice
2 tsp all spice
I marinaded the pork tenderloin all day and then grilled them on medium heat until the internal temperature reached 160 degrees F.
For dinner I created a salad that I have to share with you. It was absolutely delicious and I savoured each bite while oohing and awing over the miraculous flavour combinations.
Grilled Pork and Asparagus Salad
Makes one serving
1 – 2 cups baby spinach leaves
10 asparagus spears, grilled
red onion, thinly sliced
1/2 avocado, sliced
4 oz. pork tenderloin, thinly sliced
1/2 TBSP whole grain mustard thinned with water
Toss all of the ingredients together and you’ve got yourself a salad full of fresh spring flavours!
Enjoy!
Do you plant a herb garden?
What vegetables to you plant in your garden? Our backyard is inhospitable for a garden due to all of the tree roots, but I’m happy I can still have fresh cherry tomatoes and kale from my potted plants
Steel cut or rolled oats? I ate rolled oats last year, but then I tried steel cut oats and my life was instantly changed! Steel cut oats are so darn good! I look forward to them every morning
Have a great Tuesday friends! See you tomorrow!
Meg
xoxo

i really want to plant an herb garden! there’s a community garden that you can rent space at and i’m super tempted to start. if i had a basil plant…oye. i would be SO happy!
You should definitely rent a space so you can plant girl!
I want your garden!! That looks awesome. Unfortunately no garden for us this year, but hopefully next we will! Sounds amazing
p.s. you are gorgeous!
Awww thank you love <3 You are STUNNING
I’m pretty sure I have the exact same breakfast just about everyday! (including this morning lol!). I planted an herb garden – I did basil, chocolate basil, stevia, dill, cilantro and mint! I live in an apartment so I can only do pots (as opposed to a real garden in the ground – so no veggies this year). My other pots have lots of flowers and pretty non edible plants!
Oh, and steel cut all the way. I eat rolled oats more often because of the conveinence but I’m gonna use your idea and make it the night before!!
Sounds like we both have great herbs growing
I love eating the Stevia leaves
Gahh! I need to come steal your Thai basil
Gorgeous herbs, you have a truly green thumb!
Haha thanks Emma
I am freaking out on all your amazing herb choices!!! I haven’t had the chance to head back to our local nursery, but can’t flippin’ wait!!
I hope you find a ton of herbs
Get lemon verbena if you can!
I’ve been wanting to plant herbs for ever! But we have lived in apartments where it hasn’t been the best idea. Now we have a balcony so I might just have to finally do it!
You definitely should!!
Yum your breakfast and lunch seriously look amazing.
Awww thanks Alex! They tasted amazing too
I have never had steel cut oats… I think it’s about time I tried them. YAA GARDENING! I did my veggie and herb garden this weekend too!! New this summer- waterlmelon and spaghetti squash! I hope they turn out
That salad looks like it could rule my life as it contains pork tenderloin and avocados..two things I can’t live without. Will make it soon since that recipe looks o so scrumptious!
Good luck with the melon and squash! How exciting girl!!!!
Let me know when you try the recipe! I promise you the pork tenderloin will change your life <3
I think my puppies would destroy my garden if I did one- I would have to build a fence, but I don’t think I want to do that.
If I had a garden, I would like to have cucumbers, sweet potatoes, peppers, broccoli, and garlic.
Garden cucumbers are amazing
Love all of the fresh herbs!! I can’t wait to get our new house so I can purchase some herb plants.
How exciting!
The marinade and salad looks so good! I would love to grow my own herbs, I want to steal all of yours
I think I’d kill them within a day, I suck at gardening. I love oat bran the most, then rolled oats I think. I’ve actually only had steel cut once, takes forever to cook!
That’s why I cook them the night before
I really need to try YOUR recipe for oat bran as I love oat bran so so much!
That is so awesome!!! I want my own garden
When I was younger my mom actually grew tomatoes in our backyard. Definitely the best tasting tomatoes I’ve ever had.
Veggies from the garden are always better
I’ve never had steel cut oats, in fact I’ve never even seem them here!
Very jealous of your herb garden! I think I might go to Bunnings this weekend and see what I could get for my little garden. It seems so expensive to buy fresh herbs.
Ohhh I love Sambal so much. Bookmarked this post
Thanks girl!
Let me know if you try out the recipe!
Your garden looks GORGEOUS!!! Seriously. Wow, wow, wow!!! What an awesome thing for you and your mom to do together.
I’m a steel cut oats fan, for sure. Nothin’ like ‘em!
Agreed
Yum that pork marinade sounds delicious!! You look so cute grilling
. I love my rolled oats. I could never wait that long for steel cut oats to cook haha. Hope you’re having a great day beautiful girl! Love you <3
Haha! Thanks Lindsay
I do like steel cut oats better but I always have rolled in the house so I tend to use those. I make them the night before too though – I put extra liquid in, cook them up and then let them sit overnight in the fridge and they double in size, so that’s my main motivation behind it
.
Love your herb garden! I’ve had a herb garden my whole life but I don’t right now
. It is one of my favourite memories though, going to the garden centre with my dad and picking out the herbs that we planted later that day together. I think I was 10 when I first started it!
I should try your method for rolled oats! Sounds great! Double in size!? Nothing wrong with that
Yay for sleeping in! That rarely happens to me ether, so I can relate! The herbs you chose are awesome! My mom and I plant cucumber and cherry tomatoes every year and they are always great, the cherry tomatoes usually produce a lot of fruit! This year we even planted a spaghetti squash! Can’t wait to see how it grows
I am so excited for you! I haven’t ever planted spaghetti squash before!
ummm i didn’t even know there were different types of basil!! both these recipes look awesome.. i’m more of a rolled oats kinda gal but thats mostly just because of time, not taste
xooxo
The types of basil are amazing
I plant them every year!
I’ve recently planted herbs (from seedlings) – although only chives and basil (but my basil isn’t doing too well!)
I’m on the 11th floor of an apartment building – I don’t know whether its too hot for them/too windy or what!?
And as for my poor parsely seeds – I got one to sprout up, then the wind blew the poor sprout over and broke it!
its so expensive to buy herbs from the supermarket, I really need to get more to grow!
Oh and from experience, just a tip, I would suggest transplanting your mint to its own pot and it tends to overgrow/outrun other herbs if planted in the same pot as others…. :/
The mojito mint is planted alone, but thanks for the tip
As for the chocolate mint, I have planted it with others before and it’s done very well
Yummy foods! How did you make your eggs? They almost look too pretty to …almost lol. Also I was wondering if you wouldnt mind sharing you workout routine for bis and tris?
Thank you! Have a wonderful evening!
I just make my eggs in a pan?
5 egg whites and 1 whole egg
I can see about doing a post on my workouts!
Glad to hear you are interested
You’re growing cinnamon??? I might die. I’m going to need LOTS of pictures
You know I love pictures
There will be LOTS my dear
We grow herbs too and I’m always so excited to cook with them in the summers. Fresh herbs can take a recipe from good to spectacular!
Also that pork recipe looks amazing – I will definitely be trying it soon!
Let me know how you like it hun
I love love love it
Your herb garden looks great! I have one too!
I have never tried steel cut oats… I need to!
herb gardens are so fun!! my parents have one, and I’m definitely going to miss it when I move. We don’t have things like chocolate mint or lemon verbena though, I can’t WAIT to see what kind of recipes you invent with those!!!
I’m excited to show you
I’m getting my herb garden started again! I loved having an endless supply of basil, but the heavy rains we had last year totally wiped them out.
Oh no!
Sorry to hear that love
Love the grilling pic of you!
I used to love rolled oats but I tried to cook them the other day and I couldn’t stand the texture. I love eating them raw in my breakfast cookie dough cereal. I will have to try hot steel cut oats soon!
I know you like your breakfast cookie dough cereal, but you have got to try steel cut oats
I love them
I have just planted some strawberry plants and I cannot wait for them to grow.
I had strawberry plants when I was young!
How exciting!
Oh, I’m SO excited about your herb garden!! Five different kinds of basil?! I never knew there were so many varieties! Looking forward to those yummy recipes, hun. And goodness, your pork salad looks and sounds delicious! I haven’t cooked with pork in AGES, but now I’m craving it!
We have a few planter boxes on our deck, but other than that, we still have a ways to go on our garden. I know one of my housemates is planning on buying some mulch this weekend. I want to plant flowers too!
As you know, I’m still pretty knew to the oats for breakfast thing.
Once I’m finished with my rolled oats, I’m definitely going to take your advice and try steel cut!
Love you, sis. Loved your email this afternoon too! I have busy day tomorrow, so if I don’t write back, I promise I’ll do it Thursday!! Love you!! xoxo
I hadn’t had pork in a while either, but when my Mom suggested I grill some I was so excited! I have been enjoying it
Can’t wait to hear from you lovely!!!! Have a great week! Love you sis
We also have a herb garden. I love just going outside and picking fresh herbs for cooking. They seem more intense in flavor and they look pretty growing in the garden!
I usually use rolled oats for my morning oatmeal but like using steel cut oats for overnight oats!
Fresh herbs definitely make recipes better!
I am trying to grow a small herb garden (nothing compared to yours) this summer. I’m also trying to grow some tomatoes. Fingers crossed I don’t screw it up.
I have my fingers crossed for you
Tomato plants are pretty easy! I am sure everything will turn out babe! <3
herbs make a world of a difference in a recipe, fresh herbs! looks awesome meg!
Thanks Lindsay!!
I’m absolutely dying to get a garden started- your little herbs look wonderful!
