Does anyone remember when I did Meatless Monday recipes each Monday of the week way back when?
Looking back, I realized I created some pretty amazing recipes…
Curried Tofu over Quinoa and Kale
Zucchini Noodles with Chickpeas and Tomatoes

I was reminded of my love for creating recipes for Meatless Monday when reading a recent post written by my lovely friend, Caitlin. She mentioned in her post that, even though she is a meat eater, she still loves venturing out to enjoy vegetarian or vegan meals. I can definitely agree with her. I love tofu, tempeh, and other various plant-based proteins, but I definitely do not have them as much as I would like. I changed that when I went to the grocery store this week, though
I thought it would be fun to try making a tofu dessert, so I bought a package of firm tofu, went to the kitchen, and got to work!
Obviously, I took out my Magic Bullet (my all time favourite kitchen tool) and created a chocolate tofu mousse inspired by this recipe.
Chocolate Orange Tofu Mousse
Makes one serving
170 grams firm tofu
3 TBSP almond milk
1 TBSP cocoa powder
1/2 scoop chocolate protein powder
1/4 tsp ground cardamom
12 drops NuNaturals Orange Liquid Stevia
Blend all ingredients together in a blender until smooth. Chill in refrigerator before serving.
This is definitely the most decadent recipe I’ve created yet. It was so rich and smooth. The flavour reminded me exactly like that of a Terry’s Chocolate Orange. Remember those?
I really hope you give this recipe a try. I was surprised how smooth the firm tofu got. It was truly incredible and I am currently working on some new flavour combinations to share with you soon
Now that I’ve shared the recipe that I’ve been itching to share with you all weekend (ok, it was only since Saturday, but it feels like an eternity) I have to update you on my girl! Since my last post about Cuddles, she has only progressed! She has continued to eat for us which has given her so much energy! She’s walking better, she looks more like her peppy little self, and she even started to play with me last night!
I was teasing her with a treat and all of a sudden she started jumping around just like her usual spunky self!
This is proof that praying does work! I’ve received countless comments, tweets, emails wishing Cuddles well and I cannot thank you more <3
All of our prayers have definitely been heard and my girl has a little jump in her step again
Hopefully this continues, but, as always, I will keep you updated <3

i do eat meat but i love going meatless… quite often, actually. i’ve only made tempeh once and it wasn’t awesome, so i’m definitely more of a tofu fan! i’ve made a cheesecake-like dessert with silken tofu before… and loved surprising everyone when i told them there was tofu in it! hehe

This looks fantastic! I’ll be bookmarking this to make sometime soon! I have never made dessert with tofu. I usually only use it in salads or my eggs. It would probably be awesome in smoothies though!
I’ve heard great things about tofu in smoothies, but haven’t tried it myself yet. I only have smoothies after my workouts, so I think that’s why I haven’t tried it before??

Seriously TWINS! Haha! I made chocolate orange oats today! I used to love those damn chocolate orange candy yums and that is what inspired the oat combo!

I’m a vegan, but I don’t like to eat too much soy. I prefer beans/lentils/grains, but will occasionally have tofu/tempeh as a treat. Your mousse looks great!

My heart is always with veganism and I try my best to stay that way (6 years now) but I have problems with IBS that make my diet very limited anyway, so it is hard sometimes and I do have trouble with certain vitamins (particularly D3) etc. Plus my eating disorder sometimes causes me to ‘break out’ and binge on non-vegan foods, or adopt meat-centric high protein diets in a desperate attempt to lose weight (mostly to look like bloggers such as yourself who eat a lot of chicken and seafood – in my dreams!) But yes, if I didn’t have a stupid eating disorder then I’d be vegan 100% of the time – when I am thinking clearly that’s where my ethics point me.
So happy that Cuddles has improved!
In terms of the tofu mousse have you ever tried it using silken tofu? It makes an even smoother mousse than the firm tofu, particularly if you don’t have a very powerful blender.

This was the first time I made it, so I have never tried it using silken tofu. Maybe I will have to next time!
This looks SO good! I need to give this a try … especially because my favorite thing in the whole wide world is involved (Magic Bullet)! I’m not a vegan or vegetarian, but I always try different dishes. I have meatless days … they’re not always on a Monday, but they do happen

My first 3 years of college, I was a “pescatarian” or basically a vegetarian who would eat fish when I came home or went to a restaurant that had some. I loved it and really enjoyed the diversity, but then I discovered free range meats!! Since my main reason for being a veg was because I was against the way manufacturers raised and processed meats, this was a wonderful alternative! I began eating some meat again, and I really enjoy it– so tasty and easy protein. Now, I eat meat (mostly chicken or fish) about once a day and a TON of eggs (thanks Tara
I do still enjoy tofu and tempeh sometimes, but I eat a lot less of it. I have grown to like cheeses and yogurts, too, so they are a handy protein source!

I never liked those chocolate orange candies. lol. I used to get so mad when my step dad would always buy them for us!
I think he did it on purpose just so he could have all of the candy. lol. Tofu mousse sounds so good though!

This is so funny because I literally was googling a tofu mousse recipe last night to try and make because I have so much tofu to use. Thank you so much, I now know what my dessert will be tonight. Oh the puppy looks so much happier today! Love it!

It was delicious Brittany! You’d never know it was tofu. I made some for my Mom and she HATES tofu. It makes her gag, actually, but she enjoyed this!
Sometimes I try to take a break from meat because I usually have it twice a day but I drink a ton of water so I like to think that helps my poor liver handle it
I don’t eat soy so I suppose eggs would be meatless alternative…but I eat those everyday too, lol. Gosh I love eggs.

I’m ALL for meatless! I have a block of tofu in the fridge and I think I’m going to make that curry tofu dish with it:).

When I read your email today and learned that Cuddles has a bounce back in her step, I was SO SO SO happy! Meg, I’ve been praying for her every night! I lost a dog a few years ago, so I know how heart-wrenching it is to watch a close friend struggle. <3
Your chocolate tofu mousse sounds delicious! I'll definitely be giving it a try! And yes, I definitely remember those chocolate oranges; although in the US they're sold under a different brand name. Santa used to leave one in my stocking every year.

Wooo meatless monday!! I’m definitely making an effort this month to rely less on meat for my protein. it’s easier now that my vegan sister is home for summer haha! And this recipe looks so fun! I’ve done tofu soups before so I know it blends well but I’d never thought to make a dessert out of it! and we all know how much I love ice cream. and orange-chocolate

I LOVE vegan mousse too! My all-time favorite is a raw version that has avocado and cashew as the base. It’s pretty magical.

I feel like I’m one of the few vegans who doesn’t love tofu! I’m definitely more of a tempeh girl because the texture and taste is so much better in my opinion. I really want to try a tofu mousse though, yours looks amazing!
