Goals, a Bachelorette Party, and a Recipe

Ok, so I realize none of the topics in the title really pair with each other, but they all did last night! ;)

Last night, I went to one of my best friends’ bachelorette party. It was held out of town at a saloon, so we all dressed up in our cowgirl gear and had a great time!

I actually played match-maker in the relationship of the about-to-be newlyweds (bride-to-be pictured above with pink feather boa), so it’s so special to me when I see how happy they are together <3

We played all sorts of fun bachelorette party games and I even won a prize for being able to text the fastest ;) I was pretty excited when I won because the prize was tea! :)

Earlier on this week, I was asked to make an appetizer for the party. I love being asked to make a dish for outings because I usually take advantage of the occasion and try a new recipe that I have been dying to try! So that is exactly what I did!

I found this recipe for Layered Mediterranean Dip on Pinterest one day when I was avoiding biochemistry being very productive and I knew it would be the perfect appetizer to make for the bachelorette party!

I took the easy route and purchased my favourite hummus to use for the base of the dip instead of making my own.

But, I did make my own pesto! :)

Cilantro Walnut Pesto 

1.5 cups fresh cilantro leaves
2/3 cup chopped walnuts
2 garlic cloves
1/4 cup + 1 TBSP extra virgin olive oil
1/4 cup Parmesan cheese

Blend all together in a food processor adding the oil in as needed.

Once the pesto is made, add the second layer to the dip.

Followed by the cucumbers, red onion, and banana peppers

One change I did make to the original recipe was the addition of artichoke hearts! I thought they would pair perfectly with all of the other toppings and the girls at the party loved them, too!

Once the artichokes and chopped black olives were added, it was time for the feta cheese followed by chopped sun dried tomatoes!

The dip was a success and I’m so happy I made it! It actually allowed me to cross off one of the goals I made for June! ;)
I wanted to start making more recipes that I have found on blogs or pinned on Pinterest and I did just that! :)

I actually made a new friend at the bachelorette party as well, so that would make it a total of two June goals complete already! My new friend invited me over for a girls night on Monday to watch The Bachelorette, drink tea, and hang out. I’m looking forward to it, but have never watched The Bachelorette before, so I may be a little lost; however, I know many of you watch it, so fill me in! Haha!

I hope you all are having a wonderful weekend so far! I usually don’t care knowing that Monday is tomorrow since I don’t have a full-time job, but I have a biochemistry exam tomorrow, so I hope today drags out ;)

fun!!! i set up my best friend with her fiance too so i loooove seeing them together! we are just a match made in heaven haha my weekend has been good! last night i went to one of my co-workers wedding and we were all breaking it down on the dance floor! i love trying new recipes when cooking for other people… especially healthy recipes instead of the traditional crap filled ones :) :)

Biochemistry, you’ll will be able to do if for sure. A lot less calculations and stuff than other chemistry’s which is awesome for me! Kind of like physiology with a chemistry spin. Don’t be scared love xoxo

Mmm those dip recipes are sounding tasty! Dips are my favorite part of a food spread at parties.. usually because they are so unique and flavorful! Well hopefully haha

Wow, that dip looks incredible! I have a baby shower to go to, and this dip may make an appearance. Of course, I may need to omit the peppers, or the mommy may go into early labor. LOL kidding… ;-) Sounds like you’re having a fabulous weekend!

Ooooh, I’m loving that layered Mediterranean dip! Maybe I’ll make it for my girls’ night Bachelorette viewing tomorrow night! Speaking of which, I’m so excited you’re going to watch for the first time! It’s such an indulgent show, but I haven’t missed a season since it started (way back in the early 2000′s, when I was in high school). It’s a tradition my mom and I started, and now it’s a tradition with my girlfriends. We love providing commentary during the show; analyzing (and making fun of) each of Emily’s suitors makes for lots of laughs! It’s also fun to have an excuse to sip a glass of wine or make a fun cocktail. Tomorrow night we’re making a watermelon cocktail that I may post on the blog (however, I might not have time to post this week–four papers are due! Eep!)

The bachelorette party you attended sounds like so much fun–I love the cowgirl theme! And you’re rocking that hat, girlfran. ;-p
