I’m living proof that no matter the amount of crab one eats you will not turn into a crabby person
So not to worry, I am still the fun-loving and positive Meg as always! Just with a bit more crab in my belly than usual

Over the past week, I have had several servings of crab. I enjoy crab on its own, in sushi, sandwiches, pasta dishes, and salads! Crab never gets boring.
Looking back on all of my meals including crab lately, one in particular stands out.

I love crab and avocado sushi rolls, but was craving a salad for my dinner one night. So, I created a deconstructed crab and avocado sushi salad!
1 serving crab (I used fresh steamed Dungeness crab, but you can use canned crab if you would like)
2 cups mixed greens
cucumber, diced
2 radishes, sliced
1/2 avocado, sliced
1/2 sheet nori paper, shredded
Assemble your salad by placing (in an attractive fashion as seen above
) all of the above ingredients in a bowl.
I also made an incredible salad dressing that accompanied this dish perfectly.
Sesame Ginger Dressing
1 TBSP sesame oil
2 tsp ginger
1/2 TBSP soy sauce
1 – 2 tsp lemon juice
1 TBSP white wine vinegar
Place all ingredients in a blender and blend until smooth. Drizzle over salad.
This salad will definitely crush those sushi cravings of yours – if you get those? I know I get them on a weekly basis
To make this salad more filling, add brown rice to the mix!
Now that you have a new recipe to try, it’s time to reveal the exciting news I mentioned yesterday!
I have recently been contacted by a staff member from
my university asking if I would like to be part of a leadership panel that is taking place this week at Brescia for a group of high school students from Hong Kong.
When I received this offer, I was shocked. She thought of me??
I was blessed.
I am so grateful to have been thought of and offered such a great opportunity. I couldn’t turn it down, so on Tuesday morning my Mom and I will be flying to London for a quick trip so I can talk about leadership and how I became involved at Brescia. The panel takes place on Thursday July 12th, so I have some time to prepare what I want to say.
Once again, I must show my appreciation to be given this opportunity. It makes me feel like I am doing something right. Standing out and being noticed through my leadership activities.
Thank you to those who thought of me to be a speaker for this panel discussion and also to my parents for giving me the opportunity to make a quick trip to London on such short notice. I wouldn’t be where I am today without my wonderful parents <3

ahh i love love LOVE crab! my family always does beach week every summer – like my entire extended fam in this giant beach house – and on one night that week we have a crab feast. They’re so good with Old Bay on them! I love this recipe though, crab and avocado is just a fantastic combination. and omg CONGRATS on being asked to speak at the panel! that’s a HUGE honor, and you totally deserve it!

I haven’t been able to eat them. They are rock hard! I have bought one from the store and seriously left it to ripen for over a week, and it just doesn’t.

! Next time wrap up your avocado in newspaper and store it way for a few days..that’s my go-to for ripening avos!

Congrats girl!! That is so exciting! I just can’t get myself to eat crab… Luvy will eat it, but I just can’t. I eat Tilapia and Salmon… that’s as far as I go with seafood!

This salad looks awesome! Thanks for the dressing idea – I usually just put soy sauce on my sushi rice/salad bowls with some wasabi on the side, but I’m definitely going to try this dressing next time!

Meg, that is such an exciting oppurtunity. I know you will do a fantastic job working with those students. I love all types of seafood, but the hubby is not a big fan, so I only get it when we go out to eat. The last time I had steamed crab legs which were divine.
