WIAW: Summer Staples {Kale Wraps}

Jenn came up with what I think to be is her best theme for WIAW yet - Summer Staples!

I'm really excited to share some of my summer staples with you over the month of August, so let's get started! :)

This week, I have a meatless recipe for you that includes kaletempeh, and DAVIDsTEA!

As most of you already know, I had a beautiful kale plant this summer that provided me with luscious green leaves for numerous salads; however, plants only last so long…

Luckily, grocery stores do sell kale too, so I suppose that will have to do for now ;)  

Instead of using kale as a base for a delicious salad, we'll be using them as wraps today! :)

Kale Wraps with Spicy Mango Tempeh and Avocado Cream

Mango tempeh:

1/2 block tempeh (approximately 100 g)
3 tsp DAVIDsTEA's Mango Diablo*
Loose tea leaf bag
5 oz. boiling water

*Note: If you do not have this type of tea you are able to use 2 tea bags of a mango flavoured tea along with 1 – 2 tsp red chili flakes as your marinade. 

Transfer loose tea leaves into tea bag. Place tea bag into 5 oz. of boiling water. Allow tea to steep and cool. Once cool, pour the tea over the tempeh in a marinating dish. Keep the tea bag in the marinating dish, so the flavour can further develop. Allow tempeh to marinade for at least a day. 

After a day or so of marinating, I pan fried my tempeh. 

Avocado cream:

1/2 avocado
1 heaping tsp plain greek yogurt
2 TBSP water

Blend all of the ingredients together until smooth. 

Wraps:

2 large leaves of kale
tomato, diced
cucumber, diced

Remove the thick stems from the kale. Then I like to steam my kale for a few seconds int he microwave so it is a bit more flexible. 

Assembly:

Pour the avocado cream in the centre of your kale leaves

Arrange tempeh, cucumbers, and tomatoes on top of wraps 

And last, but not least, enjoy! :)

A summer staple for me is most definitely frozen yogurt. Oh wait…I eat that all year long. Oh well! I haven’t used kale as a wrap before but I love using swiss chard!

Yayyyy tempeh is one of my summer staples as well! :D I’m hoping to make it into different tasty ways~with seasonings and all. And what a clever idea about the summer staples, indeed! It’s always fun seeing what others enjoy.

I LOVE the idea of using kale as a wrap! It’s so much more durable than flimsy lettuce , which quickly becomes limp and soggy. :-/ And oh my, that avocado cream sounds delightful! It’s been ages since I’ve enjoyed tempeh, but this post has induced some serious cravings (as is per usual with all of your posts!).

My summer staples this year include: avocados, raspberries, salmon, spinach, goat cheese, eggs, brussels sprouts and sweet potatoes! Oh, and coconut milk ice cream. I ALWAYS have a pint in my freezer. :)

Meg, the recipe looks delicious. I am not a big tempeh fan so I might swap it out for grilled chicken or shrimp. My summer food staples include greek yogurt, fresh fruit, and the occasional indulgence of ice cream.

Look at you shaking my world up. In general, for me: chard or collards = wraps, kale = salad or chips. Both = smoothie additions or great steamed/sauteed! Today I’m going to stuff mushrooms with chard and some sirloin and goat cheese. om nom nom how long til dinner?!

I’m a huge fan of kale but I don’t like it raw. I need it roasted, grilled or sauteed. I need to try to grow kale this fall. I eat enough of it. Thankfully it’s cheap at the store ;-)

I love this theme best too!! Those kale wraps look killer! I’ve been loving your egg method lately too–thanks for sharing the secret to your “perfectly pretty” breakfast! I love dressing them up with fresh herbs and goat cheese but not as much as I love you!!! Happy Wednesday sweet girl!

Aww, I feel you on growing greens…I have collards in my garden, and I’ve picked a couple plants down to nothing, so there’s soon going to be that same transition to the grocery store version…

I’m really intrigued by the idea of marinating tofu in tea! And guess what I just so happen to have on hand? Tempeh and loose leaf tea ;D Green tea with brown rice, my current favorite flavor–I bet it would make for perfect tempeh for a stir fry!

Great idea!! I tend to use romaine hearts for my lettuce wraps because I get shredded kale. However, I just might have to give this a try. Thanks for sharing :)

I’ve used collards as wraps before, but never kale. This looks super tasty though!

My summer staples are ratatouilles or pasta sauces with eggplant, zucchini and tomato, lots of grilled meats, and lots of fresh berries! :D

I added a huge handful of baby kale to my salad for lunch today – yummy stuff! I haven’t used the leaves as a wrap, but it looks amazing!

I seriously love kale…and love the idea of using them as wraps!! I have a kale plant too, but silly me only bought one, so it doesn’t reproduce as quickly as I’d like it to :P So I had to buy some kale from the grocery store last week! I made kale chips for the first time last week and I don’t know why I waited so long…clearly I was living a deprived life…not anymore! haha

Very creative to use kale as a wrap! I’ve heard of using collards but never kale–just another excuse to eat one of my fave veggies :)
Summer staple for me is definitely fresh berries. I never buy them during the year, so I go hog wild in the summer months when they’re in season!

I had tempeh today too:) Love that stuff! We are totally twins, I made an avocado dressing super similar to yours!

I’ve been looking for kale all over here in Germany but cant find it! Hopefully I’ll find some soon so I can try it and make these wraps. They look delish! :)

A Summer staple of mine is fresh fruit juice! I love making homemade popsicles. :)
