Jenn came up with what I think to be is her best theme for WIAW yet - Summer Staples!
I'm really excited to share some of my summer staples with you over the month of August, so let's get started!
This week, I have a meatless recipe for you that includes kale, tempeh, and DAVIDsTEA!
As most of you already know, I had a beautiful kale plant this summer that provided me with luscious green leaves for numerous salads; however, plants only last so long…
Luckily, grocery stores do sell kale too, so I suppose that will have to do for now
Instead of using kale as a base for a delicious salad, we'll be using them as wraps today!
Kale Wraps with Spicy Mango Tempeh and Avocado Cream
Mango tempeh:
1/2 block tempeh (approximately 100 g)
3 tsp DAVIDsTEA's Mango Diablo*
Loose tea leaf bag
5 oz. boiling water
*Note: If you do not have this type of tea you are able to use 2 tea bags of a mango flavoured tea along with 1 – 2 tsp red chili flakes as your marinade.
Transfer loose tea leaves into tea bag. Place tea bag into 5 oz. of boiling water. Allow tea to steep and cool. Once cool, pour the tea over the tempeh in a marinating dish. Keep the tea bag in the marinating dish, so the flavour can further develop. Allow tempeh to marinade for at least a day.
After a day or so of marinating, I pan fried my tempeh.
Avocado cream:
1/2 avocado
1 heaping tsp plain greek yogurt
2 TBSP water
Blend all of the ingredients together until smooth.
Wraps:
2 large leaves of kale
tomato, diced
cucumber, diced
Remove the thick stems from the kale. Then I like to steam my kale for a few seconds int he microwave so it is a bit more flexible.
Assembly:
Pour the avocado cream in the centre of your kale leaves
Arrange tempeh, cucumbers, and tomatoes on top of wraps
And last, but not least, enjoy!
Let me know if you try this one guys! You know I always love reader feedback and it sounds like a lot of you have been enjoying my eggs and brownie breakfast parfait lately
It makes me so happy <3
What is a summer staple food of yours?
Do you like to use kale as a wrap?
What's the best thing you've ate today?
Love always,
Meg

A summer staple for me is most definitely frozen yogurt. Oh wait…I eat that all year long. Oh well! I haven’t used kale as a wrap before but I love using swiss chard!
Yayyyy tempeh is one of my summer staples as well!
I’m hoping to make it into different tasty ways~with seasonings and all. And what a clever idea about the summer staples, indeed! It’s always fun seeing what others enjoy.
OH HOLY YUM!!!!!!
I’ve never though to use Kale for a salad wrap. As always, such a genius idea girl!
Have a great day
I LOVE the idea of using kale as a wrap! It’s so much more durable than flimsy lettuce , which quickly becomes limp and soggy. :-/ And oh my, that avocado cream sounds delightful! It’s been ages since I’ve enjoyed tempeh, but this post has induced some serious cravings (as is per usual with all of your posts!).
My summer staples this year include: avocados, raspberries, salmon, spinach, goat cheese, eggs, brussels sprouts and sweet potatoes! Oh, and coconut milk ice cream. I ALWAYS have a pint in my freezer.
Happy WIAW, sis!! Hugs! xoxo <3
You will LOVE to avocado cream, sis
I just know it!! <3
this post reminds me that i havent had tempeh in ages! delicious recipe! i just wished i could find that type of kale here in austria! thanks for sharing the recipe anyways!
Meg, the recipe looks delicious. I am not a big tempeh fan so I might swap it out for grilled chicken or shrimp. My summer food staples include greek yogurt, fresh fruit, and the occasional indulgence of ice cream.
i’ve never thought to use kale for a wrap! great idea. i really like lettuce leaves for wrap, so i bet this would be delicious.
Look at you shaking my world up. In general, for me: chard or collards = wraps, kale = salad or chips. Both = smoothie additions or great steamed/sauteed! Today I’m going to stuff mushrooms with chard and some sirloin and goat cheese. om nom nom how long til dinner?!
This looks amazing!
I love finding new ways to use kale, this looks great. What a good idea.
Love the recipe and loving all the kale! You are amazing with all these awesome recipes! Keep them coming!
Yum! I want to try making some avocado cream just to dip veggies in! That sounds so good!
I’ve never tried kale as a wrap. I will have to do that!
I’d imagine that you’d LOVE the avocado cream sweetie
I love that you used Davids Tea in this! So creative! I’ve never thought of using kale as a wrap – great idea Meg. My summer staples: basil, peaches, strawberries & iced tea. (Loving Tropicalia this year)
I love that YOU love DAVIDsTEA too
I wish we could sip on some together <3
Wow! I think Kale Wraps just became my new favorite thing. I have been looking for other ways to use Kale and this is great!
haha that poor kale plant!! will it grow back or do you need to buy a new one now? kale is one of the things I want to start growing
And what a great idea to use it as a wrap!
I don’t think it will grow back :p
Ah! As always, that recipe looks SO good!! I love kale, but actually haven’t used it as a wrap. And the best thing I’ve eaten today? Well, I just woke up, so actually I’m drinking a cup of tea!
I’m a huge fan of kale but I don’t like it raw. I need it roasted, grilled or sauteed. I need to try to grow kale this fall. I eat enough of it. Thankfully it’s cheap at the store
These look soooo good! I’m book marking the recipe right now!
Considering I’ve only eaten breakfast today … I would have to say that was the best thing I’ve eaten! But it was a homemade breakfast wrap with eggs + turkey – one of my favorite combos!
I love this theme best too!! Those kale wraps look killer! I’ve been loving your egg method lately too–thanks for sharing the secret to your “perfectly pretty” breakfast! I love dressing them up with fresh herbs and goat cheese but not as much as I love you!!! Happy Wednesday sweet girl!
HAHA! You’ve been using my egg method!? Oh that makes me so happy, love
HEHE!
LOVE YOU BESTIE
Aww, I feel you on growing greens…I have collards in my garden, and I’ve picked a couple plants down to nothing, so there’s soon going to be that same transition to the grocery store version…
I’m really intrigued by the idea of marinating tofu in tea! And guess what I just so happen to have on hand? Tempeh and loose leaf tea ;D Green tea with brown rice, my current favorite flavor–I bet it would make for perfect tempeh for a stir fry!
Let me know how you enjoy marinating things in tea
I have more tea recipes on my tea page
I don’t have any tempeh, but I think it would be great with grilled eggplant!
GREAT IDEA!
Ok we seriously have the same mind. I bought of fresh bunch of kale a few days ago at the store! He he. I don’t know why this twin thing still surprises me at this point but it always does!
HAHA babe you’re hilarious! I know, I love being your twin
We don’t even try
Great idea!! I tend to use romaine hearts for my lettuce wraps because I get shredded kale. However, I just might have to give this a try. Thanks for sharing
I’ve used collards as wraps before, but never kale. This looks super tasty though!
My summer staples are ratatouilles or pasta sauces with eggplant, zucchini and tomato, lots of grilled meats, and lots of fresh berries!
per usual… this looks amazing!!!!!!!!
I added a huge handful of baby kale to my salad for lunch today – yummy stuff! I haven’t used the leaves as a wrap, but it looks amazing!
loving this avocado cream! interesting to use kale instead of collards or romaine, great choice! I love that these are super quick and easy to make too! perfect for summer!
Those wraps look increrdible. I’m on a lettuce wrap/cabbage boat kick lately!
YUM! I’m totally making this
and I’m going to make that avocado cream into a dip for veggies right now!
Haha! I few people said they would do that with the avocado cream! It is so yummy! <3
You had me at kale wraps!! Must try this sandwich and stat!!
That looks truly epic.
Mmm KALE! I’ve never though of using it as a wrap–GOOD idea! Looks delicious <3
Yumm! I have never used Kale as a wrap. And I’ve never had tempeh! A definite summer staple for me is tomatoes!!! Love how they taste right now.
I have no words. I swear, your recipes get more creative and delicious every day!
I’ve been waaaiittting for this recipe and I’m SO excited to try it! I would have never thought to use tea as a marinade. Mmm…
Love you! <3
I have more recipes using tea on my tea page!!!!
Love you sweetie!!
I seriously love kale…and love the idea of using them as wraps!! I have a kale plant too, but silly me only bought one, so it doesn’t reproduce as quickly as I’d like it to
So I had to buy some kale from the grocery store last week! I made kale chips for the first time last week and I don’t know why I waited so long…clearly I was living a deprived life…not anymore! haha
Now you have to try grilling your kale
I like them best that way
That looks amazing! Your kale is so pretty!! Mine is dead…. along with the rest of my garden. We are in a serious drought here!
Very creative to use kale as a wrap! I’ve heard of using collards but never kale–just another excuse to eat one of my fave veggies
Summer staple for me is definitely fresh berries. I never buy them during the year, so I go hog wild in the summer months when they’re in season!
I’m going pretty wild with the berries this summer, too
Whenever I get kale I always use it to make kale chips, but now I really want to have kale wraps because these look so delicious! Thanks for sharing
I had tempeh today too:) Love that stuff! We are totally twins, I made an avocado dressing super similar to yours!
I love the kale wrap idea! Super smart lady!!
And um tea as a marinade. Genius!
I am totally fine with being your twin
YAY!
I’ve been looking for kale all over here in Germany but cant find it! Hopefully I’ll find some soon so I can try it and make these wraps. They look delish!
A Summer staple of mine is fresh fruit juice! I love making homemade popsicles.
KALE WRAPS! How have I not thought of this… this needs to be part of my life now
