Happy Monday, loves!
I hope you all had a great weekend! I'm having such a fun time camping with my parents! We will be camping until Tuesday and then I leave for the Healthy Living Summit on Wednesday! Ohmygoodnessiamsoexcited.
Today's Monday morning post is going to be a little different than the ones in the past if that's ok with you?
I want to participate in both Katie's Marvelous Monday and Heather's Meatless Monday A – Z, so I will be sharing my meatless Monday recipe with you this morning and then return tonight to show you how marvelous my Monday was!
For the second week of Meatless Monday A – Z Heather has us using beets as an ingredient! I was really excited about this week because I adore beets! They're sweet, but can be used in savoury dishes too!
Some of my favourite ways to enjoy beets are boiled and tossed in an oil (walnut is my favourite!) and used as a side dish, in a salad (if the salad has avocado and salmon that's even better!), sandwiched between two slices of toast and avocado slices, and in borscht!
The possibilities are endless when it comes to beets which is why I took a whole new spin on this versatile ingredient in this recipe!
For some reason I was very intrigued by the idea of having beets for breakfast!
Maybe it was because the last time I had beets it was in savoury type of salad?
Or maybe it was because I thought purple pancakes would look really cool?
No, it wasn't any of the above actually…
It was because of the potential for having beautiful alliteration in my title!
Breakfast, beets, and blueberries! You just can't go wrong with alliteration.
Beets & Bloobs Overnight Steel Cut Oats
Makes one serving
1/4 cup boiled beets
3/4 cup unsweetened almond milk
1 TBSP chia seeds
1/4 cup steel cut oats, raw
1 handful blueberries
stevia or other sweetener of choice
In a blender, puree beets and almond milk together until smooth. Pour into bowl and mix in chia seeds, oats, blueberries, and sweetener.
Let your beautiful purple bowl of oats sit in the refridgerator overnight. In the morning, you will have a beautiful bowl of beet and blueberry steel cut oats exploding with flavour!
I topped mine with greek yogurt and more bloobs because you can never get enough bloobs right, Heather?
