I think we can all agree that breakfast is best.
Whether it be sweet…
or savoury…
or a little bit of both…
breakfast is always best in my opinion
Lately, I have been enjoying a new favourite breakfast and I cannot keep it to myself any longer! Although it may not be a new creation to all of you, I think it's still worth sharing!
Baked eggs in an avocado! Can it get any better? Seriously.
I'm sure by now you all know my love for eggs. Especially if the yolk is a runny one…
And avocados? Well, their pretty much the key to my heart. So, when you put the two together it would only make sense that I would fall in love.
Most recipes for eggs in an avocado require an oven, but we all know I love the microwave too much to neglect it
Oh, I am also too impatient for the oven to heat up as well…
Easy Egg 'n Avocado Cups
1 large egg
1/2 avocado
Slice avocado in half and remove pit. If the whole where the pit used to be is large enough, crack egg and pour into hole; however, the dent from the avocado pit may not be large enough for your egg to fit, so you will be required to scoop some of the avocado flesh out in order for the egg to fit (make sure you eat that flesh you scooped out!
)
Once your egg is cracked into the avocado, place on a microwave-safe plate. Cook in microwave for approximately 2 – 3 minutes; however, the times will vary so I encourage you to keep an eye on your little eggy to make sure it is cooked properly
Once cooked, remove from microwave, season if you wish, and enjoy!
Have you tried cooking your egg in an avocado yet? No!? What are you waiting for!?
Have a great day, sweethearts! Please email me at adashofmeg@gmail.com if you would like to participate in tomorrow's High Five Friday!
Love always,

Such a clever Idea!! I will definitely have to try this. Mmm
I haven’t tried cooking an egg with avocado yet, but this is a microwave recipe, and I LOVE microwave recipes (so fast!). I really do love eggs, that is for sure! I however prefer mine un-runny (solid?)
Oh my yum! What is the breakfast on the top in the parfait dish- looks like pumpkin!!! breakfast is my favorite meal of the day. I could eat it for dinner too!
You. Are. A. Genius. This is PERFECT! Can’t wait to try!!

I don’t like eggs! Love avocados though! I know you have a deep love for eggies and I still love looking at all your pretty pictures
I recently just heard of this combo… I can’t wait to try it because I LOVE avocados and I love dippy eggs!!
I love your excitement for this. That is all. Ha! Loveeee you. <3
Meg, I’ve been looking for some quick breakfast ideas that I could whip up either before work or in my office kitchen. This is a great one! Love that is a great source of healthy fats and protein!
I really want to try an egg cooked in a pepper, I think that sounds so good.
Definitely gonna try this! I have been eyeing your perfect runny eggs on IG! LOVE IT!
LOVE that this is a microwave recipe. Lazy = me.
Breakfast is my favourite!!! And egg IN an avocado?! Yes, please!! That looks delicious!
What is that yummyness in the top picture?
I still haven’t tried this but it looks sooooo good! And I love that you came up with a microwave version because I always use the microwave! Haha I’m too impatient!
This is a genius idea, sis!! I can only imagine how delicious the creamy avocado and runny yolk are together! I’ve never tried cooking avocado though…does it turn brown? I’m guessing not, but for some reason, that’s what I imagine! Brown or not, I bet it’s super yummy. All of your breakfasts look fab! Love you <3
Meg! This may be your most brilliant creation yet! I have an avocado in my kitchen that I will certainly be using to make this.
Love you!!!
Mmm, breakfast. And avocados. I’ve never cooked an avocado! I didn’t even know that was an option, don’t know why.
My friend, this looks amazing. I love me some runny egg and including it with the wonderful blunderful avocado?! My Marvelous Meg is most assuredly a genuine genius!
This sounds so delicious and easy! Perfect for the morning breakfast before work!
whaaaat is that first dish?! Holy crap. Major drool fest in this post love!
And ANYTHING with avocado is a winner
I LOVE eggs!!! Unfortunately avocado is nasty in my opinion (I think it’s a texture thing. It makes me gag.) BUt what a cool combo idea. And yes, b-fast is best!
Very cool idea!! I love avocados as well, but I’m a total wuss and have yet to try and egg with a runny yolk! The only way I eat eggs is scrambled or in an omlette … I know I know … feel free to yell at me!
I’ve made that same dish for the fiance before and he loved it! I also covered it in cheese, though, and I think that added to his enjoyment!
I have NEVER cooked an egg in an avocado but I think it’s in my future!
Breakfast is for sure the best! I am definitely more creative with it over the summer though! I just don’t have as much time once the school year starts and I am constantly on the go!
that is so brilliant. We must dine together some day. I’ll bring the eggs!
I agree, breakfast IS the best!!! I am SO not a savoury breaky gal…Sweet all the way for me! I do however enjoy this very thing for lunch and dinner though! I add salsa on top!
I need to try this!! I love eggs and avocado!
I have been wanting to try the egg in avocado recipe! Looks so good and I can’t get enough of avocado!!
