A New Favourite Breakfast

I think we can all agree that breakfast is best. 

Whether it be sweet…

or savoury…

or a little bit of both…

breakfast is always best in my opinion :)

Lately, I have been enjoying a new favourite breakfast and I cannot keep it to myself any longer! Although it may not be a new creation to all of you, I think it's still worth sharing! :)  

Baked eggs in an avocado!  Can it get any better? Seriously. 

I'm sure by now you all know my love for eggs. Especially if the yolk is a runny one…

And avocados? Well, their pretty much the key to my heart. So, when you put the two together it would only make sense that I would fall in love.

Most recipes for eggs in an avocado require an oven, but we all know I love the microwave too much to neglect it ;)  

Oh, I am also too impatient for the oven to heat up as well…

Easy Egg 'n Avocado Cups

1 large egg
1/2 avocado

Slice avocado in half and remove pit. If the whole where the pit used to be is large enough, crack egg and pour into hole; however, the dent from the avocado pit may not be large enough for your egg to fit, so you will be required to scoop some of the avocado flesh out in order for the egg to fit (make sure you eat that flesh you scooped out! ;) )

Once your egg is cracked into the avocado, place on a microwave-safe plate. Cook in microwave for approximately 2 – 3 minutes; however, the times will vary so I encourage you to keep an eye on your little eggy to make sure it is cooked properly :)

Once cooked, remove from microwave, season if you wish, and enjoy! :)

perfect !!!!!! just bought an avocado yesterday !!! looks delicious , will try that for sure ;) looooove runny eggs as well , (call it “oeuf mollet” here)

i LOVE how you made this in the microwave! when i started reading i was like oy when am i going to find the time for the oven but NOPE problem solved. i bet its amaze when you stick your fork in it and the yolky ooooozes out hah

I haven’t tried cooking an egg with avocado yet, but this is a microwave recipe, and I LOVE microwave recipes (so fast!). I really do love eggs, that is for sure! I however prefer mine un-runny (solid?) :)

Oh my yum! What is the breakfast on the top in the parfait dish- looks like pumpkin!!! breakfast is my favorite meal of the day. I could eat it for dinner too!

This is a genius idea, sis!! I can only imagine how delicious the creamy avocado and runny yolk are together! I’ve never tried cooking avocado though…does it turn brown? I’m guessing not, but for some reason, that’s what I imagine! Brown or not, I bet it’s super yummy. All of your breakfasts look fab! Love you <3

I LOVE eggs!!! Unfortunately avocado is nasty in my opinion (I think it’s a texture thing. It makes me gag.) BUt what a cool combo idea. And yes, b-fast is best!

Very cool idea!! I love avocados as well, but I’m a total wuss and have yet to try and egg with a runny yolk! The only way I eat eggs is scrambled or in an omlette … I know I know … feel free to yell at me! ;)

I agree, breakfast IS the best!!! I am SO not a savoury breaky gal…Sweet all the way for me! I do however enjoy this very thing for lunch and dinner though! I add salsa on top!
