Black Bean Chocolate Mug Cake

I have a tasty recipe to share with you today that I've been keeping secret for a few weeks! I had to make sure it was perfect before sharing the recipe with you, obviously! ;)  

Since I created this recipe a few weeks ago, I've made it several times. Therefore, I've went to foodie heaven several times…

It's moist, chocolatey, and high in protein without any protein powder believe it or not! Lately, I've only been having protein powder in my post workout shakes. I think I like it that way best – focusing on eating real and whole foods. Not powders. But, that's just my preference :)  

This recipe is easy peasy just like I promised yesterday because you can have it hot and ready to eat in under five minutes with the use of your microwave! :)

Black Bean Chocolate Mug Cake

Makes 1 serving

1 TBSP cocoa powder
1 TBSP coconut flour
1/2 cup black beans
1/4 cup egg whites or 1 whole egg
2 TBSP liquid (almond milk, cow's milk, soy milk, coconut milk etc.)
pinch of baking powder
a few drops of liquid stevia 
 
Blend all together until smooth batter forms.
Heat in microwave for 2 – 3 minutes or until fully cooked!
 
Unfortunately, I don't have a pretty picture of this delicious little treat because, let's face it, are mug cakes ever really pretty? 
 
 
No, of course not. But, I can promise you that it is absolutely delicious ;)  
 
It's even better when you top it with almond butter…
 
Or coconut butter…
 
Or walnut butter…
 
Or hazelnut butter… 
 
The hazelnut variation reminds me of a Ferrero Rocher ;)

Oh YUM!! I have seen so many dessert recipes with black beans that look so good but I am hesitant to cook sweet with beans. I too only like to have protein powder for pre/post workouts and agree that it is really hard to find a good sweet recipe that does not involve PP. Since this is a single serving recipe I can try it and not have to worry about having to throw away a whole bunch of something I don't like. However, I trust you and our taste buds so I am sure I will LOVE this. Thankt you Meg!!!

Yum!!  I've baked with garbanzo beans before (I made a chocolate chip cookie pie), and the recipe turned out incredibly well.  And I've heard that black beans in brownies (or in your case, mug cake) always results in a yummy dessert!
