Saucer Eyes

It's that time of year…

My mind is racing 24/7, due dates for projects are approaching, I feel like I live at school, I cherish the moments spent lying on my couch watching The Food Network, and I often find my eyes getting big like saucers each time I think of my overwhelming to do list.

I am pretty sure every university student can relate to how I feel right now. The semester is ending, it's crunch time!

I was driving home from class the other day with my mind filled with my growing list of to do's and I could literally feel my eyes growing larger and larger. I got so overwhelmed and eventually broke down once I got home. 

Luckily, I'm pretty good at looking at the positives, calming myself down, and breaking down the big "scary" picture into some bits that, well, aren't so scary. 

I was really able to calm myself down once I realized that I only have one month left of this semester. That's it! That's all! It sounds easy peasy when I think of it like that. I know I can do this for another month and survive. 

For the next few weeks I will be focusing heavily on school, but I also want to focus on me in the process, too!

Me time is very important and I definitely make it a priority in my life! Here is a list of just some of the things I love doing while taking some essential "me time": 

Going out for dinner with my friends 

Skyping my parents

Going for a walk

Going to the gym

Going grocery shopping

Cooking/baking/meal prepping

Painting my nails

Cleaning

Drinking tea

Roaming the mall 

Each one of the things listed above provide me with happiness, comfort, peace, and, if I'm lucky… a tasty recipe! ;)

Well, today you're lucky because last week I came up with a delicious recipe that I've been craving ever since it entered my mouth for the very first time!

This recipe is a well balanced meal; complex carbohydrates from the spaghetti squash and the salmon offers both high quality protein and an abundance of those beloved healthy fats! I assure you after one bite of this unique dish, you will be craving more. 

Just like I did ;)  

Spiced Orange Salmon with Spaghetti Squash

Makes 1 serving

4 – 6 oz. cooked salmon or 1 can salmon (I used canned because, well, read above – I'm a busy student!)

2 cups spaghetti squash, cooked and "spaghettied"

2 handfuls fresh baby spinach leaves

2 tsp Dijon mustard

5 – 10 drops NuNaturals liquid orange stevia or 1 tsp orange zest and 5 – 10 original stevia drops

1 tsp five spice powder

olive oil

Heat olive oil in a pan over medium-low heat. Add all ingredients to pan and toss to ensure mustard and spices are distributed evenly. When salmon and squash are heated and spinach is wilted, remove from heat and serve. 

This recipe isn't complex by any means, but I thought I would share it with you because the flavour combinations work very well together and I hope you enjoy it! :)

I love doing a lot of those things when I am taking "me time" as well. I try to get as much time to relax to myself per day to keep my stress levels down, I also cannot wait for this semester to end! The recipe looks delish by the way I will have to try it once I get my hands on a spaghetti squash. :-)

This recipe looks awesome! I would never think to add the orange flavor but I bet it's awesome! I bet this would be great with shrimp too. I'm going to have to try it out. Me time is so key too. I need to start remembering to take more of it too!

We're such twins! I feel exactly the same way – always running down my to-do list in my mind and still never have enough time in the day to get through it all. I tend to find when I focus too much on all my "to-dos" I lose sight of all that's happening around me, therefore, missing out on the beauty in life. I like to do things around the apartment to put me at ease. As silly as it sounds, I find cleaning to be extremely theraputic and makes me feel more comfortable knowing my surroudings are neat and put together.

I love spaghetti squash!! I've been mixing my Trader Joe's chicken sausage into it with some fire roasted tomatoes. It's such a yummy comfort food!

Looks delicious! I need to get back on the spaghetti squash train, love that stuff. And that's the thing about stress–if you pause, look at it, break it all down, it isn't so bad! But ugh, the initial panic it can cause!

I actually pulled out some salmon and spaghetti squash this morning anticipating you putting this recipe up today LOL!!! I saw yesterday that you were going to post a recipe and was HOPING this was it. SCORE!!! Dinner tonight can't wait :0). Oh girl I am OBSESSED with the food network show CHOPPED. Yum, love the sound of this :) I actually prefer tinned salmon to fresh, not sure why but I think it tastes better. Hope it gets less stressful for you soon, just remember to take that time to chill and relax so you don't burn out!

That dinner looks (and sounds) amazing! I love spaghetti squash AND salmon, but have never had them together :)   On the to-do list!  As far as "ME" time, not too good at it, especially with a toddler.  BUT, I did twist my hubby's arm into letting me escape for a little girls' night fun to see the last Twilight movie. I think he just said yes because he didn't want to have to go see it with me…whatever the reason, I'll take it!

Love this! I've been eating a lot of salmon and spaghetti squash but not together like this! Can't wait to try it. I had Korean BBQ spiced baked tofu over my squash sunday. 

I tend to forget about me time. I love enjoying my coffee and a lesiurely breakfast while catching up on shows on hulu. Although, this time of year that will change to abc family and lifetime christmas movies :)

Enjoy your you time!!! Drink a cup of tea for me :) Have you tried stormy night or merry cranberry at david's yet?? so good!

Haha! Grocery shopping is definitely one of the top things on my "me time" list too! Sorry to hear how overwhelming everything is right now, but I love your positive perspective on things! Good for you for breaking it down into more manageable "bits"! :D

And whoa! This dish looks/sounds amazing! Love the addition of the orange stevia…I've been looking for some new ways to use mine!
