Baking Begins Now!

Good morning, friends!

I haven't been blogging on weekends lately, but I have an amazing recipe to share with you today as I have been baking up a storm all morning!

I haven't done any holiday baking since this morning, so I am very excited and having an absolute blast with my Mom in the kitchen! :)

I received a recipe for sweet potato biscuits from a good friend quite a while ago and had great intentions to test it out right away, but school got in the way and I didn't have a chance to… until today, that is! ;)

I didn't have all of the ingredients for the original recipe given to me, so I improvised and the biscuits still turned out absolutely delicious! 

I devoured one right when it came out of the oven ;) No shame there!

These biscuits will fill your home with a delicious scent that you will be craving again and again, so I'm sure you will make this recipe multiple times! I know I will!

After baking the biscuits for 25 minutes, they were perfectly crisp on the outside, but moist on the inside! I hope you enjoy them as much as I am :)  

Sweet Potato Biscuits

Adapted from this recipe

1 cup (200 g) baked sweet potato (I left the skins on for extra nutrition!)

3 eggs

2 TBSP coconut flour

3/4 cup almond meal

1/4 cup soft cheese such as ricotta/cottage cheese

2 TBSP almond milk

1/4 tsp salt

1 tsp baking powder

1 heaping tsp cinnamon

2 droppers liquid stevia

Preheat oven to 350.

Blend all ingredients together with an electric hand mixer until smooth batter forms. 

On a baking sheet lined with parchment paper, drop batter which makes 6 biscuits. 

Bake for 25 – 30 minutes.

Remove from oven, let cool (or not!), and enjoy! :)

Mmmh, these sound lovely! I've never baked with sweet potatoes before. The last thing I baked were vegan chocolate-dipped Coconut Macaroon cookies from Vegan Cookies invade your Cookie Jar. Coconut and chocolate are a great combination.

I made this recipe yesterday, and let me tell you, these biscuits are fantastic! I ended up adding two extra tablespoons of coconut flour, because my batter didn’t seem stiff enough, but they came out well anyway. Thanks for a great recipe!
