Oh, what a Marvelous Monday it is indeed!

It's Christmas Eve, my Grandma's birthday, and the beginning of a new week! Absolutely marvelous!

Now only if the weather would warm up a bit 8-)…

I hope everyone had a great weekend! Mine was filled with baking successes

baking failures

a comforting new recipe 

and many, many friends! 

On Saturday, I made these sweet potato biscuits and have quickly become obsessed. I hope you have a chance to make them over your holidays :) Please let me know if you do!

Saturday evening was spent with some old high school friends. It was great to get out and visit with some people whom I haven't seen in nearly four years! It was a late night, 3:30 am to be exact, but it was all worth it! 

I didn't get nearly as much sleep as I should have, since I woke up at 8:00 am on Sunday morning to go to church with my Mom and Dad, but that didn't stop be from having a busy day of baking! I baked gluten free brownies and cookies for my cousin who has Celiac disease. As you can see, the brownies turned out, but the cookies, well, not quite…

Oh well, you can't win them all! ;)

I made a winning new recipe over the weekend, though! 

I am so excited to be sharing this recipe with you today! :)

As shown above, it can be a comforting meatless meal – so appropriate for Meatless Monday!

Or, it can be topped with a protein source of your choice – like I did!

Creamy Mushroom Curry over Spaghetti Squash

Makes 1 serving

1 cup chopped or sliced brown mushrooms

2 green onion springs, sliced

1 tsp oil (I used extra virgin olive oil)

1/4 cup milk (almond or coconut milk would be the best)

1 tsp curry (more or less depending on your tolerance to spiciness)

Heat oil over medium heat. 

Add mushrooms and onions to skillet. Sautee until mushrooms soften. 

Meanwhile, in a small bowl, whisk milk and curry together. When mixed, add to skillet with vegetables. 

Simmer. 

Once the sauce has reduced some, pour over spaghetti squash.

I topped this comforting curry dish with shrimp, but chicken would be delicious, too!

This recipe is perfect for these chilly winter nights, so I hope you give it a try :)

Sounds like you are having a wonderful time! I need to try the Sweet Potato Cookies they sound so delicious! Spaghetti Squash season here is over,  so sad!!! I was looking for it this week, but no. I will just stare at your pictures all day to satisfy my craving :-) Merry Christmas, girl!!

Just FYI if you're baking gluten free it helps to put the cookie dough on the sheet then put the whole sheet in the freezer for 15 minutes before baking. It helps keep the cookies from melting like that. I learned that the hard way :/ everything else looks great!

You are so freaking adorable, as always!!!! Haha at least I bet your baking fail still tasted good. Yesterday I was reading pinteresting fail blogs with my mom and we were crying we were laughing so hard!

I like dishes with curry in them, but I hardly ever use curry when I'm cooking for myself. I'll have to look up some curry recipes!

I"ve been eating spaghetti squash every day this week! I'm the only one in my family who like it so….I've been eating it like crazy. The mushrooms over it sounds beyond yummy!! and ahh sweet potato biscuits! I absolutely must try. 

Also, can I just tell you how BEAUTIFUL you are?? Seriously you are beyond gorgeous my girl, and the bangs are so perfect for your sweet little personality. Gosh I love you so freaking much! Have a great few days :)

I feel you on late nights reconnecting with friends, I was out until 4 on Saturday and still kind of want to die I'm so tired haha. Sounds like such a lovely weekend full of awesome friends and family! Love it. Hope you're having the best Christmas eve!! When are you free to chat?!

Err. My cookies look like that sometimes too, even when I follow the recipe EXACTLY. So frustrating! Haha.

Meg, you look happy and GLOWING, & gorgeous per ush:).

I’ve a heap load of sweet taters, so I definitely want to try these biscuits- you sold them to me. I actually made these awesome sweet potato pie truffles from the Clean Eating Cocktail Party today , I think you’d like’ em.

Duuude that creamy mushroom curry looks mouthwatering* drool*. I can’t wait to try this! I can never find spaghetti sqaush here though :( , I’m sure it would be over quinoa or something too?

Can you tell how to make spaghetti squash very EASY and good? Mine came out just soggy clumps :(

 

Also, any recommendations for a 1-2 serving recipe for chicken soup? And what would you eat chicken soup with? I'm not active.
