01/16: WIAW

Good morning, loves!

I am so happy with all of the positive feedback on yesterday’s post! Thank you! :)
Cait sure did make a great request for a post topic! ;) If you have a request for me make sure you bring it to my attention! Next Tuesday I will be writing another reader’s request post and I promise you it’s a great topic, too! I can’t wait to share it! :)

But, today is What I Ate Wednesday, so here are my eats and a new recipe, too! :)

Breakfast – cottage cheese whipped up with avocado and vanilla stevia and topped with Uncle Sam cereal.

I thought I’d switch it up from my usual quinoa and cottage cheese bowl and crack open the box to this new-to-me cereal! I’ve had this cereal in my cupboard for a while now, but haven’t opened it until the other day. I’m not sure why because it’s great! I like having it with cold almond milk, too!

Mid-morning – two savoury muffins (new recipe coming at you next week!), chicken breast, and broccoli.

Lunch – PC 5 grain blend, shrimp, asparagus, roasted garlic, and extra virgin olive oil.

Mid-afternoon – chicken breast, 1 egg, baked sweet potato, and cucumber. This meal was taken to an appointment with me and eaten on the go!

Dinner – pan seared mahi mahi with citrus spice, roasted ginger lime sweet potatoes (recipe below), and asparagus.

Roasted Ginger Lime Sweet Potatoes

1 sweet potato, cubed

juice of 1/2 a lime

ginger powder (I didn’t measure, I just sprinkled liberally)

extra virgin olive oil

Preheat oven to 400.

Toss all of the ingredients together in a bowl until all potatoes are coated with lime juice, ginger, and oil.

Place on a lined baking tray and bake until done.

This was a delicious recipe! I combined two flavours that I love, ginger and lime, with one of my all time favourite foods, sweet potato. I usually have my sweet potato plain (see my mid afternoon snack) or coated in cinnamon, so this was new to me, but I loved it! It was slightly tangy, but absolutely delicious! I hope you give it a try for something different if you are a sweet potato and cinnamon person like myself ;)

Bedtime (9:00 pm) – egg whites and hazelnut butter. I was nearing the end of my hazelnut butter, so I literally licked that jar clean ;)

Another great WIAW! We have such similar food preferences, so I really enjoy reading these! :)

Hmm, my favorite thing I’ve eaten recently was a grilled bison steak that I had on Monday night. It was so perfect; medium-rare! I don’t eat a lot of red meat, but I love me some bison.
Hah. I thought I was the only weirdo who liked eggs with nut butter. I like almond butter on omelets, or hard-boiled egg whites dipped in peanut butter.

I have eggs and nut butter every. single. night. I love it! Spread it on top of the warm eggs and it makes it all melty… mm :)

Love all the meals Meg. Those sweet potatoes sound amazing. I love the flavor combo. I’ve never tried eggs and nut butter before but now I just might have to. Makes for a great nighttime snack!

I like the ginger-lime flavour combo idea! Lately, I’ve been cooking rice in coconut milk & lime juice and I bet ginger (and even cilantro) would make it even more amazing.

Oh love the sweet potato idea. I like mine more spicy. I usually use a blend I make up and keep on hand of salt, pepper, red pepper, chile powder, cumin, garlic powder. I think the citrus would make the sweet potato flavor really pop.

Your lunch looks great. I love shrimpeeeeeees! Haven’t tried nut butter n’ eggs before. I usually top with feta or salsa if anything.

I’m going to have to give the lime+ginger a try! I love to cook my sweet potatoes with sprinkle of cayenne + paprika. Gives them a little smoky kick. So good!

Oh, sis!! Those SWEET POTATOES!!! You already know I love ginger, and of course you also know that I love sweet potatoes…I can only imagine how amazing these are!! I can’t wait for the savory muffin recipe either. I already know the secret ingredient, and it sounds fantastic! You’re so creative in the kitch, sis!

Can you believe I’ve never had eggs + nut butter?? I know…crazy! I’ve made egg crepes with coconut flour, and topped them with PB, so maybe that half counts? ;) I need some hazelnut butter in my life, too, but first I must save for that walnut oil you rave about.

The best thing I’ve been eating is that sandwich that I’m sure you’re tired of hearing about now! I also had a pretty delicious omelet this morning. :D

Yes! Walnut oil > hazelnut butter ;) You NEED to try my fav oil :) Then my fav nut butter ;) Is your fav still PB?? :)

DEFINITELY not tired of hearing about that sandwich because it looked AMAZING!!!!!!!!!!!! I love you and am VERY excited for this afternoon TOO :D

Now you’re the 2nd blogger I know who’s done the eggs with nut butter – I know Britt of Go the Extra Mile loooooves it at night too!
Holy moly babe the mahi meal looks so amazing but what I’m really dying for is that savory muffin recipe b/c it reminds me so much of my beloved vegan Wildflour scones. Dare I say that recipe may be one that actually gets me in the kitchen cooking/baking for myself?!
You know I’ve loved Uncle Sam for awhile. Welcome to the party!

And your mid-afternoon snack, while simple, looks like it was really good. I like to have a variety in my meals. No “one thing” for me.

I’ve never tried eggs with nut butter before, but I can see how it would be good–eggs are so neutral when served plain (kinda like tofu) that I bet they’d be great with a little nut butter!

The food all looks great!

The best thing I’ve ate are the purely packed brownies I made, http://www.optimistichealth.com/2013/01/purely-packed-brownies.html. They are all gone now but were delicious!

The hazelnut butter/egg combo is genius! Now I just need to try and find hazelnut butter here :)

How do you make the egg whites?

I’m struggling with binging (a LOT) and need to somehow eat good for a long while…not sure how to “recover” from the binging. I think depending on the same foods all the time has wrecked my digestion and I maybe need to elminate some foods…so weak-willed. I have an immense trouble with chocolate at night (like 100 gram dark chocolate bar at 10 pm at night…no exercise ever to make up for it. :( I’m so sad and feel so pathetic.

I make my egg whites in a pan with a little olive oil. I have a VLOG showing how I cook my eggs :)
