Happy Monday, friends!
I hope you all had a wonderful weekend and are ready to make this Monday marvelous!
I don’t have much on the agenda today other than working on that 10 page literature review, so I think I’ll pack up soon and head to Starbucks and hope to be somewhat productive. Last time I homeworked at Starbucks I was incredibly productive, so hopefully the same thing happens for me today because I seriously need to make a dent in this paper as it’s due this coming Friday…
Enough about school and literature reviews, though. It’s marvelous Monday, so let’s focus on only the marvelous!
My weekend was a relaxing one. My Sunday afternoon looked like this.

Despite how comfortable I was sitting there and the fact that I literally could have sat there all weekend, I did manage to do some work in the kitchen!
I made Brittany’s Kale and Feta Crustless Quiche for my boyfriend and I for dinner last night
It was a huge success and tasted absolutely marvelous, so if you want to make your Monday even more marvelous than it’s already going to be – make this!
Although the recipe is perfect as is, I added hot sauce to mine because I can’t get enough of it lately and it made dinner even more marvelous in my opinion
Any hot sauce lover would agree
My boyfriend and I loved Brittany’s quiche so much that we polished off the entire thing in one sitting!
Now that’s proof of a marvelous quiche seeing as how the recipe was made to serve 8
But, really. Who cares about portion sizes? It’s all about giving yourself the amount of food that it needs at that particular moment.

I wish it were still the weekend! Mine was pretty busy, because I was traveling, but now i’m back to real life and school. I could use a day to catch my breath, but I really can’t complain when I get to travel! Anyway, spring break starts at the end of this week for me – I just need to push through, and then I’ll have a week off to enjoy!

Paul and I are the same way with the food we make. We made the black bean/sweet potato flautas from Peas & Crayons over the weekend and just couldn’t get enough. I also add hot sauce to everything, but Paul makes sure I try it without first.
You know I live at Starbucks for work – hope you have a productive day! There’s something about rainy days and coffee that set me up for success.

I had a fun 5km St. Patrick’s Day Race on Saturday and it was a great time, and we had perfect weather. My Monday didn’t start off so marvelous because my alarm didn’t go off and I woke up late and was late for work, but I stopped at Starbucks and got a chai tea latte since I was late anyways, and it was a treat that made my day better right away. Happy Monday!

oooh! I’ll have two must try recipes for you! One will post tomorrow (it’s not so much a recipe as it is just delicious food), and the other will be Thursday I think. Made it last night, and my husband and I couldn’t get over it. So good, full of awesome ingredients. Gotta love it.

Nothing like curling up on the sofa with your loved ones on the weekend. Actually, I’m convinced Sunday afternoons were made to be spent like that. Also, there really is nothing wrong with serving yourself just as much of a great food as you feel like. Looking forward to the update on your intuitive eating experiences.
Hope being at Starbucks will magically boost your productivity again and make working more pleasant. My Monday was made marvelous by goofing around with a very good friend during a rather lengthy lecture in university.
