New and Marvelous
Good morning beautiful friends!
Remember when I said April reminds me of newness last week?
Well, that feeling caused me to try so many new and marvelous things this past week that I thought I’d share them with you for Marvelous Monday!
I tried two new recipes using avocado for the second week of MMAZ
Avocado Chickpea Quickbread from The Blender Girl
Changes I made to this recipe*:
– Almond milk instead of hemp milk
– Stevia instead of brown sugar (and not a full 1/2 cup either, just some packets)
– Olive oil instead of safflower oil
– ACV instead of lime juice
– 1 whole large egg instead of egg replacer
Results: the taste is incredible! It was my second time making this recipe, so I knew I’d like it, but each time I’ve made it it has come out incredibly moist. Most likely because of the lack of sugar(?), so I’ll try to adjust accordingly next time and hopefully third time’s a charm!?
Blood Orange Avocado Scones from Laura at Sprint 2 the Table
Changes I made to this recipe*:
– Stevia instead of tagatose
– No blood orange zest or juice
– Increased amount of almond milk by 2 Tbsp
– Formed six “cookie” shapes instead of cutting one large ball into six wedges
Results: I love them! The texture is amazing, but if I were to make them again I would use the orange juice (just so I could experience the original version) and tone down the sweetener just a bit. I most definitely will be making these again as they are one of the best things to ever come out of my oven and I love them dunked in some milk!
*All of the changes I made to these recipes were due not having the original ingredients and using what I had on hand.
I can’t get enough avocado, so I plan to continue my avocado recipe testing streak. These are some of the recipes I have in mind:

Clearly, I’m going to need a lot of avocados, so I better go shopping as I ran out yesterday after all of the baking I did

Another love in my life besides avocado, is papaya.
Papaya is a new love of mine as I used to not like it when I was young. I remember picking the papaya pieces out of my fruit cups because I thought they were too hard and flavourless; however, with my new found love of fruit, I’ve been eating a lot of it lately and all varieties, too!
I created two new recipes over the weekend using papaya
Surprisingly, only one of the two recipes contain avocado, though
I’ll share both of these recipes later on this week, but for now I’ll remind you of this recipe. I have so many recipes that I want to try, but realized this weekend that I have so many recipes of my own that I need to repeat! So, while doing some meal prep this weekend, I made my Curried Cauliflower, Green Bean, and Red Onion dish to have on hand this week to use as a side dish
I love curry and hadn’t made a curried dish for quite some time, so I really enjoyed having this again! Also, roasted onions are one of the best things in the world, so I loved that, too!
Ok, time to stop gawking about food and dreaming of all of the recipes I have yet to try! I’ve got a busy day ahead and need to start being productive!
