New and Marvelous

by Meg on April 8, 2013

Good morning beautiful friends!

Remember when I said April reminds me of newness last week?

Well, that feeling caused me to try so many new and marvelous things this past week that I thought I’d share them with you for Marvelous Monday!

MiMM

After creating two new recipes last week using avocado for Heather’s MMAZ

Crispy Kale and Sundried Tomato Omelette with Avocado Goat Cheese Crumble

Mocha Avocado Spread

I tried two new recipes using avocado for the second week of MMAZ

IMG_5838

Avocado Chickpea Quickbread from The Blender Girl

Changes I made to this recipe*:

- Almond milk instead of hemp milk

- Stevia instead of brown sugar (and not a full 1/2 cup either, just some packets)

- Olive oil instead of safflower oil

- ACV instead of lime juice

- 1 whole large egg instead of egg replacer

Results: the taste is incredible! It was my second time making this recipe, so I knew I’d like it, but each time I’ve made it it has come out incredibly moist. Most likely because of the lack of sugar(?), so I’ll try to adjust accordingly next time and hopefully third time’s a charm!?

IMG_7303

Blood Orange Avocado Scones from Laura at Sprint 2 the Table

Changes I made to this recipe*:

- Stevia instead of tagatose

- No blood orange zest or juice

- Increased amount of almond milk by 2 Tbsp

- Formed six “cookie” shapes instead of cutting one large ball into six wedges

Results: I love them! The texture is amazing, but if I were to make them again I would use the orange juice (just so I could experience the original version) and tone down the sweetener just a bit. I most definitely will be making these again as they are one of the best things to ever come out of my oven and I love them dunked in some milk! :D

*All of the changes I made to these recipes were due not having the original ingredients and using what I had on hand.

I can’t get enough avocado, so I plan to continue my avocado recipe testing streak. These are some of the recipes I have in mind:

Avocado Protein Pudding from Purely Twins

Kermit Muffins from Heather Eats Almond Butter

Raw Avocado Lime Soup from Vegan Miam

Vegan Avocado Scones from Family Fresh Cooking

Avocado Scones with Hemp Seeds from Bite Sized Thoughts

Blueberry Avocado Pudding from Clean, Pure, and Simple Blog

Chilled Avocado Citrus Soup from Running to the Kitchen

Clearly, I’m going to need a lot of avocados, so I better go shopping as I ran out yesterday after all of the baking I did ;)
If you have any other must try avocado recipes for me, let me know! ;)

Another love in my life besides avocado, is papaya.

IMG_7239

Papaya is a new love of mine as I used to not like it when I was young. I remember picking the papaya pieces out of my fruit cups because I thought they were too hard and flavourless; however, with my new found love of fruit, I’ve been eating a lot of it lately and all varieties, too!

I created two new recipes over the weekend using papaya

IMG_7241

IMG_7257

Surprisingly, only one of the two recipes contain avocado, though ;)

I’ll share both of these recipes later on this week, but for now I’ll remind you of this recipe. I have so many recipes that I want to try, but realized this weekend that I have so many recipes of my own that I need to repeat! So, while doing some meal prep this weekend, I made my Curried Cauliflower, Green Bean, and Red Onion dish to have on hand this week to use as a side dish :)

IMG_7278

I love curry and hadn’t made a curried dish for quite some time, so I really enjoyed having this again! Also, roasted onions are one of the best things in the world, so I loved that, too!

Ok, time to stop gawking about food and dreaming of all of the recipes I have yet to try! I’ve got a busy day ahead and need to start being productive!

Have a marvelous Monday, friends!

Love always,

Meg xo

That I was able to do a long run AND a long bike ride at the gym today. That I got to spend some quality time with my boyfriend catching up on How I met your mother. And that we got Japanese takeaway for dinner :)

Those avocado recipes you shared all sound great!

I JUST bought a papaya over the weekend! I think I might be cutting into it tonight…I always get too excited and they usually aren’t QUITE ripe enough before I hack into ‘em. :)

I really need to try this whole ‘baking with avocado’ thing. I imagine it just does WONDERFUL things to breads and dough.

Reply

Meg April 9, 2013 at 7:16 AM

You really do need to bake with avocado :D !! It’s amazing! Also, papaya recipes are coming tomorrow!

I am so glad you liked the scones!!! You defintiely need to try them with some citrus – it really makes them special. :)

Reply

Meg April 9, 2013 at 7:16 AM

Thanks babe! Yes, the scones were amazing. My boyfriend ate them all on me last night!?!?!? I’m so sad hahahaha I ran out of almond meal making them, so I’ll have to grab some more or make my own to make more! HE LOVED THEM!

Lauren April 8, 2013 at 9:10 AM

Red onion is the best whether it is grilled or mixed into a salad! I think it has the best flavor in the world although I feel bad for those who talk to me the hours after I eat it. Haha! One of my favorite local places has a roasted veggie wrap with them in it. It’s about 75% of the reason I buy them!

Reply

Meg April 9, 2013 at 7:17 AM

BAHA! You’re adorable! I LOOOOOVE grilled onion too! Such a “must” on kebabs :D

Ahh, SO many delicious eats here, sis!! I just ate avocado toast, and I’m already craving avocado again! I’d love to try your avocado omelet and mocha avocado spread! Both look AMAZING!!

A huge YAY to papaya! It reminds of Maui! When I’m there, I usually eat half a papaya every morning. I love the firm, buttery texture and unique flavor. It’s such a special fruit, and definitely one I don’t get enough of!

Hmm…I’ll have to think about avocado recipes! I like avocado in everything, so usually any avocado-containing recipe gets two thumbs up from me. :)

Happy Monday!! Let’s figure out a time/day to FaceTime soon! xoxo <3

You really can’t taste it in her scones, so I highly recommend trying them, too :D Also, the bread I made – no avocado flavour either!
