Sweet Potato Protein Muffins

April 16, 2013 | Eat, Food, Recipes | 39 Comments

Good morning lovies!

I can’t stress the love I have for blogging and my fellow bloggers enough.

Last week I was really craving a sweet potato muffin, so I asked my good friend Sarah if she had a recipe of the sort. Unfortunately, she did not. However, Sarah is one of the sweetest people in the world and whipped up a brand new recipe just for me to satisfy my sweet potato muffin craving!

Sweet Potato Protein Muffins 2

Seriously, could she be any sweeter?

Not only is she sweet, but she’s an amazing recipe developer, as well. If you haven’t checked out her blog yet, please do so after reading her guest post here today!

Take it away, Sarah! πŸ™‚

Hi! My name is Sarah and I am the girl behind Ingredients Of A Fit Chick! I am so honored to be here today sharing this recipe! About a week ago, Meg asked me if I had a sweet potato protein muffin recipe on the site. I thought about it and realized that I didn’t, so I immediately told her I would make one for her! I mean, who doesn’t love sweet potatoes or muffins? Then pack them with protein and you have a huge win! I know I can always use some extra muffins around the house for when I need a snack to grab on the run! Within 48 hours I had a recipe for her and what do you know? She asked me to share it with all of you! I couldn’t be more excited!

I have known Meg since last summer when we met at the Healthy Living Summit in Boston! It was an amazing weekend filled with food, fun and making new blends! Meg was so sweet and welcoming to not only me, but everyone that she met! Since then we have followed one anothers journey (or recipes ;)) via our blogs, instagram and twitter. I have to say, that I don’t think there is a more inspirational and influential girl out there! Between her amazing progress in the gym (killer guns girl!) to the absolutely outstanding progress she is making with I.E. Not only does she share the ups, but she shares the struggles too. I know she has impacted me in more ways than one throughout the last 8 months. I feel truly lucky to have met Meg and look forward to all the excitement that awaits her! So, thank you Meg for being such a beautiful person!

So, what better way to thank such an amazing person? Make them some muffins! I hope you enjoy this recipe!

I can’t wait to test out these recipes! I imagine pulling them out of the oven and smothering one in cashew butter πŸ˜‰

Winning combination? I think so!

What is your favourite protein muffin recipe?Β

What have you been craving recently?Β I’ve been craving more scones and bread! I love both of these recipes! I made another batch of scones yesterday and they turned out even better than the first πŸ˜€

See you tomorrow!

Love always,

Meg xo

    Meg–love ya, girl!
Sarah– You know I love you, too!

These sound great. I appreciate how you always make the serving sizes small (this only makes 4).. I can’t stand when I am given a recipe for 36 muffins. Who eats that if they aren’t going to a party!?

Yummy looking recipe! I have been craving nothing consistent, which I guess is A-OK. πŸ™‚ Brown rice is a new obsession, and lots of fruit and yogurt in general.

I really craved carbs in the beginning of this pregnancy. This recipe would have been a great one for that first trimester. But I also think these would be great to keep in the freezer for after the birth snacks. Do they freeze well?

These look so good! How did it take me so long to even think about protein muffins like this?! πŸ˜‰ I’m working on a new tempeh protein muffin recipe for myself right now, because protein muffins aren’t something I’ve ever really eaten before.
