I can’t stress the love I have for blogging and my fellow bloggers enough.
Last week I was really craving a sweet potato muffin, so I asked my good friend Sarah if she had a recipe of the sort. Unfortunately, she did not. However, Sarah is one of the sweetest people in the world and whipped up a brand new recipe just for me to satisfy my sweet potato muffin craving!
Seriously, could she be any sweeter?

Hi! My name is Sarah and I am the girl behind Ingredients Of A Fit Chick! I am so honored to be here today sharing this recipe! About a week ago, Meg asked me if I had a sweet potato protein muffin recipe on the site. I thought about it and realized that I didn’t, so I immediately told her I would make one for her! I mean, who doesn’t love sweet potatoes or muffins? Then pack them with protein and you have a huge win! I know I can always use some extra muffins around the house for when I need a snack to grab on the run! Within 48 hours I had a recipe for her and what do you know? She asked me to share it with all of you! I couldn’t be more excited!
I have known Meg since last summer when we met at the Healthy Living Summit in Boston! It was an amazing weekend filled with food, fun and making new blends! Meg was so sweet and welcoming to not only me, but everyone that she met! Since then we have followed one anothers journey (or recipes ) via our blogs, instagram and twitter. I have to say, that I don’t think there is a more inspirational and influential girl out there! Between her amazing progress in the gym (killer guns girl!) to the absolutely outstanding progress she is making with I.E. Not only does she share the ups, but she shares the struggles too. I know she has impacted me in more ways than one throughout the last 8 months. I feel truly lucky to have met Meg and look forward to all the excitement that awaits her! So, thank you Meg for being such a beautiful person!
So, what better way to thank such an amazing person? Make them some muffins! I hope you enjoy this recipe!
Sweet Potato Protein Muffins
* 1 1/3 scoops (38g) vanilla whey protein powder
*1/4c (28g) coconut flour
*1/2c baking stevia (or sweetener or choice, to taste)
*1 tsp cinnamon
*1/4 tsp nutmeg
*1/4 tsp ginger
*1/4 tsp clove
* 1 1/2 tsp baking powder
*1/2c + 1 tbs (130g) liquid egg whites
*1 tbs (14g) coconut oil
*1/2c (113g) mashed sweet potato
*1 tsp pure vanilla extract
*1 tsp (7g) molasses, optional (but highly recommended)
1. Pre heat your oven to 350 degrees.
2. Spray 4 muffins cups with non stick spray.
3. In a bowl, whisk together your dry ingredients: protein powder, coconut flour, sweetener, spices and baking powder.
4. In a second bowl whisk together your wet ingredients: egg whites, coconut oil, vanilla extract and sweet potato.
5 Combine your wet and dry ingredients.
6. Divide the batter evenly among 4 muffin cups.
7. Bake for ~22-24 minutes. (They will seem a bit soft still, but they will continue to set)
8. Once cooled, drizzle with molasses, if desired.
