Marvelous Breakfast Hash

Marvelous Monday should start off with a marvelous breakfast.


Wouldn’t you agree?

Last week I decided to bust out my vegetable sprializer and start putting it to use. I’ve been spiralizing sweet potatoes for a variety of different dishes, but this breakfast hash was by far my best creation.

Sweet Potato and Ground Turkey Breakfast Hash

Serves 1

1 medium sweet potato, washed and spiralized (you could also slice thinly, grate, or chop into small hashbrown-sized cubes)

1/4 sweet onion, sliced

garlic powder


smoked paprika

olive oil

precooked ground turkey (I used approximately 1/2 – 2/3 cup)

1 handful spinach

1 egg

Heat olive oil in a pan over medium heat. Add sweet potato and onion and sauté until onion becomes translucent. Season with garlic powder, pepper, and smoked paprika. Add turkey and spinach and toss until spinach is wilted. Spread hash evenly on pan and crack egg on top. Cover and allow egg to cook.



Once the egg is cooked, carefully transfer to plate.


I like my egg yolks runny, but it’s up to you as to how long to cook your egg!


I guarantee you that this breakfast will make your Monday even more marvelous than it was going to be! So, go heat up that pan and make this hash! 🙂

    I saw your pic on Twitter on the weekend and was looking at the stores around here for a spiralizer, but couldn’t find one 🙁 maybe I need to order it. I think I would use it to spiralize zucchini, but your breakfast is a must try too!!

    I miss dippy eggs, not supposed to eat them while pregnant, have to be fully cooked! Soon enough I will have them again though 😉

    I don’t have a vegetable spiralizer, but if I did, I’d totally make zucchini noodles with it. I love runny yolks too! They’re so great on so many different dishes.

    Something that’s making my Monday marvelous is just being able to enjoy being with my family. We’re all usually off doing our own things, so it’s nice to have a little more time when we’re all in the house.

    Ah I have to get a spiralizer! Love the look of those sweet potatoes and it must really cut down on cooking time, with them being so thinly sliced!

    Marvelous today is remembering where I was last Memorial Day at this time…in an abusive relationship with a guy as well as an abusive relationship with food where I restricted and over thought everything I ate. What a HUGE difference a year makes!

    Looks easy, healthy and delicious, especially with the smoked paprika in it. I don’t have a spiralizer but I wish I did, I’d love a veggie version of this!

    This is such a smart use of the spiralizer! I never thought to use it with a sweet potato. I usually stick with zucchini to make raw noodles for my creamy spinach pesto 🙂

    Mmmmm! Oh Meg, this looks fantastic! I’ve been saying I was going to make some sort of sweet potato hash for a while now but still have never done it! Of course, now that I’m seeing yours (with the perfectly runny egg), I’m totally motivated to make one!!
