Marvelous Breakfast Hash
Marvelous Monday should start off with a marvelous breakfast.
Wouldn’t you agree?
Last week I decided to bust out my vegetable sprializer and start putting it to use. I’ve been spiralizing sweet potatoes for a variety of different dishes, but this breakfast hash was by far my best creation.
Sweet Potato and Ground Turkey Breakfast Hash
1 medium sweet potato, washed and spiralized (you could also slice thinly, grate, or chop into small hashbrown-sized cubes)
1/4 sweet onion, sliced
precooked ground turkey (I used approximately 1/2 – 2/3 cup)
1 handful spinach
Heat olive oil in a pan over medium heat. Add sweet potato and onion and sauté until onion becomes translucent. Season with garlic powder, pepper, and smoked paprika. Add turkey and spinach and toss until spinach is wilted. Spread hash evenly on pan and crack egg on top. Cover and allow egg to cook.
Once the egg is cooked, carefully transfer to plate.
I like my egg yolks runny, but it’s up to you as to how long to cook your egg!
I guarantee you that this breakfast will make your Monday even more marvelous than it was going to be! So, go heat up that pan and make this hash!
