Good Thursday morning, lovies!
I hope your day is off to a great start already!
It’s bright, sunny, and hot here in London today, so I’ve spent most of my morning outside
Lunch time is approaching, though, and I have a strange but good recipe to share with you today!
I came up with this recipe after seeing Ali’s Instagram picture of her salmon salad
The combination of salmon, apples, and cashews that Ali came up with seemed strange to me, but really intrigued me…
So, I made my own version with what I had on hand!
Crunchy Spring Salmon Salad
2 – 3 cups baby spinach leaves
1 apple, chopped
1 filet of salmon, cooked and flaked
1 handful cashews
a couple of spoonfuls of cottage cheese
I’ve really been reducing the amount of time I spend on Instagram, but this is an example of how I want to use it – as a source of inspiration.
Instead of seeing pictures of people, their meals, etc. and comparing myself, my life, and my way of eating to theirs, I was able to use Ali’s salad as an inspiration to create my own. Definitely a better way to put Instagram to good use!
The reason that this salad is considered strange but good is because I have never paired salmon and apples together! Also, even though using cottage cheese as a salad dressing is one of my favourite things to do may seem strange to others!
