After all of the talk about parsnip fries yesterday, I really wanted fries. Unfortunately, I didn’t have any parsnips at home and my fridge is jam packed, so I didn’t think a trip to the grocery store would have been a great idea. So, I used the carrots that I had in my fridge to make fries!
I followed the same recipe as I shared yesterday, but subbed carrots for the parsnips and cinnamon for the steak spice. They turned out ok, but not amazing. They didn’t get crispy like the parsnips. They were more like floppy bunny ears. No really what I was craving, but at least I tried!
Don’t get too disappointed in the flop of the carrot fry recipe, though. I do have exciting news for you today! I have another recipe to share and some questions to answer after being tagged by Katie in a blogger survey!

I’m from Canada, so we have provinces instead of states and I have lived in two; Saskatchewan and Ontario. Ontario is where I currently live.

I haven’t made too many recipes recently as I’ve been busy creating recipes in my kitchen, so my favourite recipes currently are all mine! I suggest that you make these parsnip fries and also try the recipe I’m about the share with you for Tarragon Roasted Carrots!
Carrots, another vegetable that is in season, which is perfect for those of us trying to eat a seasonal diet. One of my favourite herbs to pair with carrots is tarragon and the ghee glazes the carrots perfectly and makes them taste heavenly. Your perfect comfort food on a cool autumn day.
Tarragon Roasted Carrots
1 lb. carrots, washed, peeled, and cubed
1 TBSP ghee, melted
Preheat oven to 425 degrees F. Toss carrots in a bowl with ghee to cover evenly. Season with tarragon and sea salt. Transfer to a lined baking tray and bake for 30 minutes or until browned and done.
