I think spring is finally here, guys!
Yesterday, Eddie and I made turkey burgers and grilled them on the barbecue outside! It was wonderful. Nothing tastes more like spring-time than food off of the grill!
Our turkey burgers were simple; ground turkey, fresh garlic, red onion, freshly ground black pepper, and fresh parsley, but Eddie jazzed them up with a homemade mango salsa!
Typically, I’m not a fan of fruit salsas. For some reason fruit and onions just don’t make my tastebuds happy, but this salsa was something else and made me reconsider my previously mentioned feelings of fruit salsas.
Perhaps it’s because Eddie made it? That might have something to do with it, but even if the love of my life had nothing to do with the creation of this mango salsa I’m sure I’d still love it. It was that good. And since it was that good, it would be wrong of me to take credit and share his recipe on my own. So, take it away, Eddie!
Last night I thought I’d show off my skills to Meg and her parents, so I through together a fresh mango salsa that requires no cooking.

Eddie’s “Mango Madness” Salsa
1 ripe mango, cubed
1/4 large red pepper, seeded and finely chopped
2 tbsp. red onion, finely chopped
10 leaves fresh cilantro, chopped
1 tsp. curry powder
1 tbsp. rice wine vinegar
salt and pepper to taste
Combine all ingredients in a bowl and mix thoroughly. Allow to marinate for 10 minutes. Serve chilled or at room temperature.
We served the salsa on top of the burgers Meg and I made.
